Chef William Soh of Saltwater Cafe has recently launched his newest cook book, Taste of Nostalgia. His latest venture features home-cooked dishes or noodle soups which makes reminds you of memories of heartfelt cooking from traditional methods and time-proven ingredients. Here's one recipe from Chef Willliam which he has graciously shared with OpenRice.com.. Don't be shy and cook this for your reunion dinner at home!
Serves 2
Ingredients:
300gms prawns, de-shelled
150 gms, celery, peeled and sliced
3 gms dried shrimp and garlic
50 gms XO sauce
Salt and pepper, to taste
Dash of Chinese white wine
Procedure:
1. Blanch prawn in hot oil for a few minutes. Also blanch celery in hot water with a dash of salt for a few minutes. You will know it's done once its colour has turned vibrant green. Set aside in a plate.
2. Heat up wok with a little bit of oil. Saute garlic, add shrimp and XO sauce.
3. Add celery and prawn. Fry for a few minutes. Add a dash of Chinese white wine. Season to taste
