It is hard to come across delicious and authentic Middle Eastern fare here in Singapore. Thankfully, executive sous chef Martin Satow of mezza9 has created a menu of tantalizing Middle Eastern mezzes and mains that showcases the best of food from Turkey and the Middle East.
10 Petite Mezzes
Indulge in 10 different mezzes created by chef Martin that were inspired by his travels. Mezzes are small plates or dishes served to accompany alcoholic drinks in Southeast Europe. The Imam Bayildi (foreground of first image) is a burst of refreshing flavours. It consists of stuff eggplant with tomato onion and olive oil.
The dish sounds simple perhaps, but the execution of it is impeccable. According to chef Martin, he realized from his travels that food in the Middle East is generally greasier.. Hence, he wanted to create a healthier menu with fresh ingredients so that the mezzes taste cleaner on the palate. For example, fresh mint is used in the Kisir, a Turkish bulgur salad, for a refreshing kick-start to your meal.
3 Flavourful Mains
Chef Martin has crafted 3 different mains featuring both lamb and chicken. The highlight of the trio is unanimously the Shish Taouk, 220grams of chicken thigh, aggressively seasoned with spices and cooked kebab-style. The meats are marinated with garlic, spices and yogurt and best eaten with the pita bread on the side.
