Breakfast Burrito with Tomato Salsa
Originating from his secret collection of recipes, Chef Edward Hoe of Violet Herbs shares how you can make a hearty Breakfast Burrito with Tomato Salsa to help start your mother’s day right. Ingredients Scrambled eggs 5 eggs 3 tbsp milk 5 tbsp cream 1/8 stick vanilla bean Salt (depends on individual) Finely ground pepper (not crushed peppercorns) 30g chorizo – Julienned 30g chopped tomato (do not deseed) 20g grated cheddar 1-2 pieces of tortilla Arugula Salad Tomato Chili Relish 500g tomatoes 3 red chilli (big) 1 white onion 1 bulb garlic 60g Sugar Salt Pepper Tomato Salsa 3 Roma Tomato - chopped ¼ red onion – finely chopped ½ bunch coriander leaves – chopped 1 tsp of rice wine vinegar Sugar 1 tsp olive oil Salt and pepper Directions Method to make scrambled eggs 1. Mix the 5 eggs, milk, cream, vanilla bean, salt and pepper well. 2. Fry the Chorizo and Chopped tomato for about 20 seconds. 3. Add the egg mixture into the pan. 4. Keep stirring till eggs are scrambled and well cooked. 5. Remove scrambled eggs from pan. Method to make tomato chili relish 1. Blend all the ingredients 2. Sauté in low heat till the liquid is dried up. 3. Add sugar, salt and pepper Method to prepare Tomato Salsa 1. Add all ingredients and mix thoroughly. Method to prepare Burrito 1. Microwave Tortilla for about 30seconds. 2. Spread ½ tbsp. tomato chili relish 3. Add the scrambled eggs. 4. Topped with cheddar. 5. Wrap the Tortilla neatly so that the ingredients do not fall out. 6. Pour about 2 tbsp of salsa on your Burrito to complete!
