The “Bridge” Between Fine Dining and You

Expect no white tablecloths, uncomfortable tableside service or skyrocketing prices when you dine at Bridge, a posh bistro on Seah Street that hopes to bring fine dining-style dishes to the masses, albeit in a more casual ambience with instrumental jazz tunes by Dave Koz on play.

Food wise, the restaurant definitely peaks in its presentation skills and the man behind every elegantly plated dish at Bridge is Head Chef Sky Chan – formerly a Junior Sous Chef at renowned fine-dining restaurants like JAAN, Joël Robuchon and Corner House. Topping pan seared Foie Gras ($18, pictured) with candied hazelnuts not only served to be aesthetically pleasing but also added a sweet crunch to balance its richness.

Speaking of which, another melt-in-your-mouth option on the menu is the Kagoshima A4 Wagyu ribeye, Holy Cow ($48, 100g serving, pictured). In this dish, the accompanying sauce – truffle jus – is kept minimal, so that you can focus on savouring that heavenly and buttery wagyu in all its glory. To up the ante, Bridge has also recently brought in the Kagoshima A5 Wagyu ribeye at $120.

For more affordable indulgence, get the Belly & Cheek ($27, pictured), a 36-hour sous vide combination of pork belly, cheek and jaw, served together with savoy cabbage that gives a reminiscent Asian touch alongside a pumpkin puree. While this sinful and fatty dish is amazingly juicy, do take note that some might find it a tad oilier than preferred. Leaning towards healthier options? Go for Homarus ($38 for half lobster, $65 for whole lobster), a Boston lobster and squid couscous duo with dollops of squid ink foam on the side that you’ll want to mix in.

While owner Lawrence claims desserts aren’t their forte, we beg to differ, especially when it comes to the Dark Passion ($16, pictured) that is every chocolate and citrus lover’s dream come true. On one side of the hazelnut nougatine is a luscious 68% Saint-Domingue dark chocolate mousse, and on the other, a zesty Shikuwasa sorbet.

Two other desserts on the menu include the Decon Cheesecake ($14, pictured) with raspberry jam, lemon cheese foam and a surprise in the middle, as well as an Affogato ($9) comprising salted milk gelato and cocoa sprinkles on top.
