I know it might not sounds very healthy but i am a big fan of pig's trotter. My choice of the part is always the hind leg. It still has the fatty part that i like but not as fatty as the other part. The fatty part has got an incredibly soft texture if braised well. The fat part did not taste as oily as expected and it is superbly soft and it melted in your mouth effortlessly. This particular pig's trotter has met my expectation and i enjoyed it.
