Like i mentioned in the title, the small restaurant holds only around 25pax at any one time. Do not expect to be sitting in a big airy restaurant, but a small cosy, somewhat has good japanese ramen soup feel to it. I was there at the restaurant at 520pm and seeing it only opens at 6pm i decided to go walk around tras street area first. By the time i return at 550pm, there was already a queue formed. Like i mentioned in the title, the small restaurant holds only around 25pax at any one time. Do not expect to be sitting in a big airy restaurant, but a small cosy, somewhat has good japanese ramen soup feel to it. I was there at the restaurant at 520pm and seeing it only opens at 6pm i decided to go walk around tras street area first. By the time i return at 550pm, there was already a queue formed. We were extremely lucky to be the last 2 to get an available seat (counter seat though). Ramen orders are processed speedily. The shop is tended to by just 4 man, one the cashier/kitchen assistant, one chef (japanese, stall manager) and 2 servers. While in the queue outside the shop, you go ahead and fill up an order slip, most diners knew what to do already so i assume they are regulars). You get to choose noodle type, noodle texture, oil level and soup intensity. I chickened out and went for the non spicy version with normal noodle texture, normal oil level and normal soup base...playing it safe
. While waiting, you do the sesame seed grinding, help yourself to the marinated bean sprouts and also hard-boiled egg (white=normal, brown=low cholesterol). The ramen is served with a huge piece of seaweed, 2 slices of tonkotsu pork, green onions and small piece of black fungus. Additional condiments are also available like bonito flakes and chilli flakes. I also saw many ppl asking for what looks like spicy garlic which kinds of add flavor to the soup. i tried eating it with the tonkotsu pork but did not delight. Soup base is thick and tasty but not overkill. i would ask for less oil in future though. The tamago that came with it is amazing, one of the better ones i've tasted. Sat just in front of the small kitchen preparation area, i could see the chef preparing the soup bowls with different paste planted onto the bowl, maybe that's the secret to the delicious soup base but i sure hope that's not msg paste though. Overall a fantastic eat at $18 per bowl, been there, done that, eaten it and will be back here again
