Finally, I discovered a good fried hokkien mee within my neighbourhood coffeeshop.

Surprisingly, there are a few good food from the same Chang Cheng Mei Hua Coffeeshop.

Ordered two packets of fried hokkien mee for dinner at S$4.00 each.

His cooking of the noodles (yellow and bee hoon) are pretty consistent. I have tried three times the fried hokkien mee before I write this review. His cooking time for the noodles to simmer and the infusion of the stock flavor will determine the final taste of this dish. The flavourable stock comes from prawn shells and pork bones which are simmered for hours.

Precooked thin slices of squid, medium size prawn and sliced pork and bean sprouts are thrown into the wok and fried for a short while before serving.

The sambal chilli that goes along with the noodles are just right, not too chilly hot and not too sweet. I could taste the flavoured stock at each mouthful of the gooey noodles. Not too oily nor soggy, just the right amount of gravy add to whole combination.

Price ranging from S$4.00 to S$10.00.
