The salted egg crabs (fried) may look soaked with oil. But the fact is, this dish wasn’t actually as oily as it looked. Indeed it was perfectly fried to the right temperature and that gave its really crispy and fragrant taste, probably with the reasonable amount of butter used together with the salted egg. The salted egg crab (fried) will always taste best when eaten hot. It simply melted in my mouth and the white crab flesh was tender and didn’t stick to its shell. It was great, but I guess I h
