Firstly, lets talk about the 'usual' dishes. The xiaolongbao is Definitely something i order each time because it just feels incomplete to not order xiaolongbao. I would say the xiaolongbao here is not bad, tasty broth and all, but I think i prefer the one from dingtaifung. Where it lose out is the skin texture, which is not thin enough.

The egg lava bun is something I will never fail to order.. and I think bosses ranks in my top 3 of egg lava bun in Singapore because I like the saltiness of the egg yolk in it. The texture of the bun is very soft as well.. I like to just bite it a little and slurp the watery yolk in it. Slurps! This time i went, my boyfriend and I have' progressed' to ordering one basket each.. that shows how much we love it!

The Siewmai here is a must-do if you love siewmai. Beware though because they are really huge! Just look at the picture.. and the big succulent prawn on top of them just makes it so filling. I think its very worth the price and I like the fact that the meat in it is not too fatty.

The only disappointment this time round came from the har gow. It came in 3 different colours -white, black and yellow.. but they all tasted the same..

The star of today's entry is this!!The chilli crab tart. When I saw it on the menu, i was rather skeptical.. but wah.. the chilli crab filling is wonderful - fragrant, just right spicy and full of flavour! it even went very well with thr tart crust! I only wished I had the stomach space to eat more of this..

Remember to go on mon-sat between 230 to 5pm for 30% discount and eat to your heart's content!

Most Chinese restaurants would present an appetiser item once you are seated. Most places offer braised peanuts, but Bosses always serve up the Crispy Fish Skin ($3.80) with it’s special chili sauce. The Crispy Fish Skin is just crispy and salted moderately. While it definitely does not taste fishy, it’s light salty flavour definitely aids in opening up the appetites of one before the actual food comes.

Crispy Sesame Mango Prawn Salad Roll ($7.00) was the first item to be served. It was definitely crispy but was not greasy. The sesame also made it pretty fragrant with the fried batter. The prawns were succulent and fresh, while the Mango puree was also sufficiently sweet. The mayonnaise that came with it was a unique blend of Wasabi Mayo that came with the sharp taste of the numbing paste in sushi restaurants, but does not induce that intense numbness that will run through from the tongue to the nose due to the heavier mayo ratio in it.

Shanghai “Xiao Long Bao” ($6.50) came in sixes, as opposed to the rest of the items that came in either threes or fours in steamers. The dough was rather inconsistent on the top, with a few too thick, a few too thin and a few just right. It did not really help when one of it was also already broken when served. The ones that were fine had a very tasty broth that pretty much filled up the entire Xiao Long Bao, and the meat was just chewy and just nice in texture without any rough bits in between.

Superior Minor Char Siu Bao ($4.50) was definitely not a minor in terms of taste, but more so in it’s size (which is why it is named as such). These may look small in size, but there is a reasonable amount of meat packed inside in all the empty spaces. The pork was also definitely well marinated in the BBQ Honey sauce which made it nice and sweet. There were also no traces of fatty meat found inside the bun, a detail that was much appreciated by everyone on the table.

Har Gow ($5.00) was also a pretty well executed dish. The prawns were fresh and succulent, though the skin can be a little too thick to some. Loved the fact that it came off from the piece of paper without any bits of the skin sticking onto the bottom.

While there is no regular Shumai ($6.00) dish here, the closest one would be the Queen of Shumai. The prawn sits on the top of the Shumai, presumably trying to be the crown for the Shumai which is why it bears such a royal name. While we did enjoy the Shumai at the bottom that contains much of the taste of prawn, the prawn that sits on top of the Shumai was a bit too stiff for our liking, and we just did not like it that they had included the shell of the tail on top, which makes it a hassle to eat.

For dessert, Ace Durian Mochi ($6.50) is one of the items that had look been on the menu ever since the restaurants inception. D24 Durian is used here, and the snow skin of the Mochi is just ice-cold and chewy, with the strong flavours of durian and the texture of the fibres being the filling of the Mochi. Definitely something not for the people who cannot take the taste of durian!

The final star of the meal had to be the Signature Custard Lava Bun ($6.50), which was full of flowy salted egg custard goodness. The bun was not too thick and a bite of the bun brings you straight into the custard that fills up most of the insides. A dish not to be missed while here!

Century Egg Roll ($6.00), personally I don't like this dish. It is sort of like a cold dish with century egg and some other ingredients (which I cannot remember what else) together in a rice skin. It tastes a little weird and has a little wasabi taste. I do not recommend this dish.

Custard Bun ($6.00), this is another dish that I strongly recommend at bosses. The custard bun here is so yummy that I can eat 2-3 at a time. The bun is soft and springy. The custard filling that is make from salted egg yolk is so smooth with strong taste of salted egg yolk. Most importantly is the custard is those flowing type, it flows out as soon as you cut the bun into half. A word of caution, do not bite straight into the bun, the filling is quite hot when it flows out. Super nice bun.

Har Gau ($5.00), the har gau here is nice, the prawn they use is quite large and is crunchy and fresh. One downside is that they do not have those typical dim sum chilli sauce but nevertheless, the chilli paste they provide is quite nice too.

The staffs here are quite nice and prompt, our tea is refilling promptly and the food is served quite quickly. Great place for family or friends gatherings but the food here is great and nice but is a little too pricey I feel. A once in a while indulgence is good.

Overall, I felt that the fried noodles were mediocre, and so is the frog leg porridge (its the boiled type not spicy so maybe that's why it isn't that flavourful). Xiao long bao was not bad. It's spicy chicken was really good and I love the custard bun!!!
A rather expensive place to go just for the custard bun, so maybe one day I will try Swee Choon as well ;)

The custard bun came in a cool-looking wooden box. As I bit into my bun with immense anticipation, I had to scramble to salvage the rich salted-egg molten custard filling as it oozed out. The best I've tried so far! LOL, you couldn't wipe off the grin from my face after I had two of the buns. Yup, I had 2, hubby only 1.

- Special stewed beef brisket with fried rice ($12)

The stewed beef was indeed special, the sauce was very good. You could tell that they probably had to stew the beef for a long time to get that taste. We didn't wanna waste the sauce so we mopped it up with the fried rice haha. The beef meat was very tender and the tendons was so soft that it felt like it melts in your mouth with each bite. The fried rice was not bad, although it was a tad dry & less tasty than I would have preferred. However my hubby feels it's perfect that way as an accompaniment to the more tasty stewed beef's broth so that there's a balance to the dish.

- Steamed dumplings aka xiao long bao ($6.50)

The steamed dumplings were quite big & chock-full of broth. But because of this, the dumpling actually breaks open with your attempt to lift it up onto your spoon. I kept trying several ways to scoop up the dumpling carefully so that it will not break but failed at all attempts. (hey, I was very gentle ok?) Luckily there's still plenty of broth left even after losing some on the journey to your stomach. The amount of pork given is generous so that might have led to the weight pulling the dumpling down with gravity. (Ok, getting a bit technical here...). The broth was flavorful - would have been better if there's more of the pork sweetness taste instead of just savory taste. It came a close second to my number one beloved xiao long bao at din tai feng.

There's plenty of seating available in the restaurant which was painted in oh-so-cool black. There was classic Chinese pop music piped overhead arranged in a jazzy-kind of way which was a tad eerie though. But probably it was to go with the whole cool Chinese theme. We had a table besides the waterfront area, a nice, romantic setting. We were kinda under-dressed for the atas setting in the restaurant but the staff were still very friendly. They also changed our plates midway through the meal and constantly offered to top up our glasses of warm water. Good service!

Being prawn lovers, we decided to try their egg-yolk prawn for our side dish. It comes with long bean and long thin slices of carrot which adds to its presentation. Fresh prawns and the egg yolk was good. The combination just adds ip to taste explosion! Bravo!

SERVICE
There is this crew leader/ manager who will recommend you the special or chef's recommendation when you are at a loss what to eat. He's quite friendly and really introduce quality food rather than not-as-delicious-food but cost more than it deserves.

AMBIENCE
Overlooking the coast of Sentosa, it's an ideal place to sit in during dinner where you can appreciate the evening/night scenery as you indulge in good food and dine "by the river". A romantic place for couples to dine in!


PRICE
It's abit expensice compared to normal restaurants. However, paying a little more for the quality of food, great service, and the beautiful night scenery, what's more can we expect?

As for the custard buns, the skins very thin and the piping hot custard with salted egg filling would ooze out once you break open the skin.
Lastly for the deep fried fish skin, I never knew fish skin can be deep fried and served as appetizer until today. It was coated with dashes of salt, extremely crunchy to the bite, not oily at all but can be a little fishy on the taste bud. But when accompanied with the chili, it masks off the fishy taste hence still tasty and enjoyable.

The Service
I find the service to be excellent. Waitresses are friendly and attentive to requests but the food served quite slow probably due to many orders

The Ambience
The entire restaurant is painted in black, giving it a very posh and somewhat fearsome exterior but overall gives me cosy & comfortable feeling

I will definitely come back again to try the other dishes and highly recommended to try this !!

This is another quite posh Chinese restaurant which I like to patron with my family members during special occasions. One of our favourite dish is their xiao long bao in lobster soup. The chinese dumplings are very smooth and easy to swallow. The meat fillings inside are also very sweet and chewy. The important ingredients for this successful dish is the sweet fresh lobster soup that making me craving for more.

We were greeted with this plate of crispy fish skin as soon as we sat down. Im dun usually eat fish skin at all(to the extent of tearing them out from fish soup) but how i have devoured these! It was very crispy and lightly salted.. almost couldnt stop if not for the limited serving. THe thing with this is that it was included as a part of the bill at $4 and wasnt told to u till u see the bill. So thumbs down for that, but we almost didnt mind because of how yummy it was.

No dim sum will be complete without xiaolongbao. We were glad that it was served piping hot with steam and they were huge and full of soup! the broth was very tasty and even angmokia could tell me its a stock that has been boiled for long. He is becoming quite an expert in xiaolongbaos. Lol. My only gripe is skin is still a little thick for my liking and too much stock means the bao is heavy and i even broke one of them.

The outer layer of the mango salad prawn was crispy and the mango provided a nice zesty taste to the other wise oily crust. I liked it but found it abit oily in the aftertaste.

We wanted to order either this scallop yam ring or the mango salad prawn fritters but took both in the end. This was super filling and i didnt remember reading it was surrounded by a mini yam ring. Very filling and because it was all fried u cant really taste the freshness of the scallop. Unique dish to try but you can save your calories on this.

This was smt i didnt eat because i dont eat beef but angmokia said it was so-so only. Beef was abit too pepperish for him and obviously takes up too much calories for one person.

The highlight of all my dimsum eats--Egg custard lava bun! These came in very fluffy orange buns which reminded me abit of the ''ji dan kueh" Again it was more sweet than salty so it still doesnt beat my favourite till date. I saw that they had the yam lava and chocolate lava smt in their menu so it could be worth trying but i was already too full.

Thumbs up for the service as well as they were prompt and one of the waitress/manager was asking us feedback on the items. Will definitely go back again!!

This Chinese restaurant looks really cool and stylish with their black and white layout and decoration around it. The staffs are very friendly and the environement is spacious and comfortable too. Tried several dishes here but the one and only favourite dish of mine will be their simple stir fried long bean. THe long beans are very soft to chewy and every pieces of it are filled with the garlic fragrant and the signature sauces used in cooking this dish. Simply delicious and great to have it
