Here we are at Cato Singapore, a new bar-cum-restaurant born in September 2015. Keeping to its shophouse, retro pub style on the second floor, that's where we enjoyed the evening with good drinks.The picture above shows the second floor. Modern Times Beer Black House Coffee Stout

Prawn bisque with homemade cod fishball & coriander leaf ($12), listed under the Tapas menu, is flavourful. The bowl looks small because this is a tasting portion. The actual portion is bigger. Anyway, this was pretty comforting and a good starter to whip up your appetite.

There is also a healthier option available - Acai Cured Salmon ($18). Acai berries were freshly purchased from the Amazon, where Acai sprouts from. The portion was a tad small, we should take cue from the categorisation from the menu. Yes, this is parked under appetisers and probably would make a good one as it is topped with a light and refreshing calamansi creme fraiche.

We also got to try the only 2 desserts served on the menu: Valrhona warm pistachio chocolate cake ($14) and the Papaya Nougat Glace ($14).

The glace is homemade, marrying the nougat and fresh papaya chunks and caramelised almonds. We saw many customers enjoying this dish and is probably one of the more special desserts they have to offer here.

The Prawn Bisque with Home Made Cod Fish Ball and Coriander Leaf (SGD$12.00) - thick, smooth and creamy broth has a delicious flavour, slightly saccharine and distinct with lobster goodness; lingering in the palate long after every drop is savoured. The cod fish ball had a class of its own - firm but soft in texture, the taste is lighter than those of the typical fishball, but very pleasant for sure. Wish I had more of those balls.

The Chicken Noodle Salad (SGD$16.00) - Chinese tea-smoked chicken salad with fresh greens and Ghost Chili seasoned noodles. The tea-smoked chicken was tender, juicy and proudly infused with the aroma of Chinese-tea and hunger-inducing smokey hints that made it a joy to chew unto. Do not be deceived by the seemingly innocuous name or appearance of the murky-coloured noodles - one bite was all it took to feel the spiciness reverberating in the ears and inferno in the mouth. I enjoyed it immensely, and had a few more bites since the rest pretty much left it alone after the first try - but bear in mind that I eat chilli padi as well (though this exceeded the prowess of chilli padi greatly). Suggestion is that you can order it for sharing, or ask the restaurant to let you have the milder or non-spicy version.

The Açaí Cured Salmon (SGD$18.00), açaí -cured salmon rounds served on starfruit ceviche with a light and refreshing calamansi Crème Fraîche & Açai jelly. Another dish that left a deep impression on me, and I am sure I needn't emphasize that a dish with health benefits definitely scores points in today's context, where people eat healthier. Springy salmon rounds were sweetly-justifiable of the salmon's luscious, mildly-fishy taste, like eating fresh sashimi. Açai jelly were tiny caviar-like rounds by the side; fun to bite on; and calamansi Crème Fraîche with starfruit ceviche added a refreshing touch of zest.

The Steam Baked Pork Cheek (SGD$28.00) - tender strips of slow-cooked pork cheek sealed in "Fata" cooking foil and steam-baked in a Port Wine Mustard sauce along with seasonal vegetables. So we eagerly unwrapped the anticipated dish like a precious present, and slowly doused the yellow sauce over it before attacking the dish. Such soft, succulent pork cheeks were a bliss to behold in between the teeth, slowly slicing through its springy texture and letting the strength of the port-wine mustard sauce come through - rather intoxicating and very palatable. I also loved the sweet vine tomatoes served with the pork cheeks.

The Papaya Nougat Glacé (SGD$14.00)- homemade nougat speckled with fresh papaya chunks and studded with almonds was soft, chewy, sweet and crunchy. Drizzled with a papaya and sweet wine reduction pooling it slowly, this decadent dessert was further enhanced in taste and flavour. Loved the berries by the side too.

Prawn bisque with home-made cod, fishball and coriander leaf (SGD12) is a velvety product of simmered prawn shells for a more full-bodied flavour, typically served in an espresso cup for you to down in one shot... ideally. In reality, it was so full of goodness from the seas and I would really prefer to sip at it slowly and dip in bread to enjoy it in entirety. Portion is likely to be small as this is a 'quality over quantity' sort of tapas selection.

Chicken Noodle Salad (SGD16) is the spiciest thing I've ever tasted, meant to be both smoky, savoury, and sour with vinegar vinaigrette... but numb was the only feeling I had after the 'ghost chili' (bhut jolokia) which the noodles were seasoned with! It was pretty crazy, but people who love to push their limits... here it is.

Fashioning one of man's greatest discoveries - the salmon - in a very different way, the Acai cured salmon (SGD18) has cured the Tasmanian Salmon Rounds with superfood of acai berries, which is intended to accentuate the fattiness and juiciness of the salmon. Oh my, if the chef hasn't mentioned it, I wouldn't have known why this salmon tasted especially plump and delicious. Pair it with the marinated starfruit ceviche with light and refreshing calamansi creme fraiche and the maroon-coloured sweet acai jelly squares on the side.

The Crispy Squid in Thai Style Glaze (SGD12) is known to be a regular-favourite and also quickly swept off the table by fellow hungry dinner companions. Strangely, I didn't find that I like it as much, it wasn't crispy but instead, feels chewy, with a sweet and sour sauce that stays true to Thai cuisine.

Steam Baked Pork Cheek (SGD28) is wrapped in a Fata cooking foil in a rather aloof way, as if it doesn't care much for being photogenic in this era of Instagram... unwrapping it, an inviting aroma wafts over, revealing tender strips of sous vide pork cheek and steam-baked in a port wine mustard sauce. The pork cheeks were super tender, I didn't even feel like I had to bite it (not literally) but it sure doesn't feel like any other regular pork cheeks. My impression of it just went on an exponential curve after getting to know it.

My favourite amongst the mains, appetizers and sides goes to this ingenious Aunty Jasmine's Fish Curry (SGD25), made from a family secret recipe. The New Zealand Ling fish is used, doused in an in-house Indian curry made by CATO's culinary team. It is really good, my eyes watered with tears as I ate it because finally, a curry that is perfect in a way I liked it... generous and full of coconut milk, spices and spicy enough too. Honestly, the fish and curry took centrestage, and everything else was promptly ignored. If you're wondering, the little yellow blobs of caviar is olive oil.

What took my breath away was the Papaya Nougat Glace (SGD14) which I thought was really special... the homemade nougat had a soft texture almost like tofu, the juicy papaya chunks and caramelized almonds lies in a pool of papaya and sweet wine reduction, all in all such heaven on earth! Desserts should all be like this, a little mysterious and hundred-percent starry-eyes inducing. I didn't exactly know what I was eating before the chef came over to explain, I just knew this was glorious dessert in the making.

In comparison, the typically good Valrhona Warm Pistachio Chocolate Cake (SGD14) wasn't as spectacular in the creativity department, but scores brownie points in how classic and well-done it is. The ice-cream on the side is in a strong premium almond flavour.

CATO occupied the first and second level of the shop house. The first level is the restaurant concept theme while the second level is in bar concept. We had our session at second level where the interior designs are rustic style with rough brick walls and wooden flooring. And the lighing at the bar was very dim so for those who opt for food photography, I would suggest to just relax with the music in-house, foods and drinks. Set aside on the photography!

This is highly recommended as it’s the secret recipe by the Chef’s family member. Chocolate cake served with almond ice-cream and some fresh pomegranate in between the plating. Although the chocolate lava cake does not flow as we expected, the chocolate cake was moist and rich flavour. I enjoyed having it with the pomegranate at the side. Plus, you will never go wrong to pair it with a scoop of ice-cream.
Overall there are some hits and misses on the dishes but if you are looking for a good place to chill out, CATO bar would be an ideal option as their specialty on craft beers were well-received. On top of these, they also have the S$1.00 special for fresh oysters starting 6pm on Wednesday Specials.

Prawn Bisque with Home Made Cod Fish Ball & Coriander Leaf - SGD12
To start, we were served with a prawn bisque, which could be enjoyed in one shot or savoured with small sips. Upon my first sip, the umami flavor dispersed throughout my mouth and I thoroughly enjoyed this given how rich and flavorful it was. The cod fish ball, though small in size, was nicely seasoned with a crunch on the outside.
Snacks to Share:
Garlic Fries - SGD8 / Cato Wings in Homemade Chilli Glaze - SGD15 / Crispy Squid in Thai Style Glaze - SGD12
These dishes are a no-brainer. Fries, wings and fried squid are well liked by many and would make a good snack over drinks. Fries here at Cato are served with a garlic seasoning, albeit a little on the salty side. The wings are coated with a chilli sauce which I found to be more sweet than spicy, hence suitable even for those who don’t take spice. The squid featured a thin layer of light batter that is fried until it is crispy and airy, leaving it without any trace of greasiness - thumbs up!
Acai Cured Salmon - SGD18
This dish is a healthier choice offered by Cato with the use of the superfood, Acai. Raw salmon is cured with acai as part of the preparation, which did not make any difference in taste. The black jelly on the side is acai jelly, which were harvested from the Amazon. Other components on this plate are the star fruit ceviche, salad and calamansi creme fraiche. Without any attention grabbing component, I found this dish to be nothing more than average.
Chicken Noodles Salad - SGD16
Never judge a book by its cover! This chicken noodles salad may seem like any other salad out there, but the noodles are tossed with blended ghost chilli. Known as the world’s hottest chilli, this is not for the faint hearted. This salad has 4 chillis next to it on the restaurant menu so diners are warned! As I’m a fan of spicy food, I was able to take the spice though it had a slight numbing effect on my tongue after a while. The chicken topping on the salad was roasted with tea and rice and served with big and juicy tomatoes.
Steamed Baked Pork Cheek - SGD28
Strips of pork cheeks wrapped within a foil and baked till tender. Unwrapping the “parcel”, we were greeted with weaves of fragrance from the pork cheeks and seasonal vegetables. The cheeks were beautifully cooked and tender. The creamy port wine mustard sauce was surprisingly not too heavy and the combination worked quite well for me!

First mouthful of this curry and I was already sold! It reminded me very much of an Indian curry that you can find at prata stores, so it might feel a bit abstract having it in a bar restaurant! This is actually a family secret recipe from the owner’s mother. New zealand ling fish is used in this dish, which I thought was slightly too tough and bland for my liking. Nevertheless, the fantastic sauce here makes up for it. Also on the plate are the star fruit ceviche, eggplant and little balls of olive.

A homemade nougat using fresh chunks of papaya and yogurt sitting in a plate of papaya and sweet wine reduction! It was slightly icy which makes a cooling dessert and the pomegranate bits added some sour tones. For something more classic, choose the chocolate lava cake. It is a definite hit and the combination of rich gooey chocolate with a scoop of ice cream rarely fails.
Located just right next to the Central Business District, I foresee Cato being a hot spot for office goers to unwind with a drink. Cato enables customers to dine in a modern setting yet being able to relate to dishes highlighting familiar asian flavors, from which I recommend the thai glazed crispy squid and fish curry.

Ambience at CATO has an old-world, bespoke allure. The rustic historic facade, rough brick walls, distressed steel beams, dark stained wood flooring, and low ambient lighting call to mind the sailing ships of old. Along with the tongue-in-cheek posters, jumping music beats from the resident disc jockey, and comfortable lounge / bar / restaurant furniture, the overall atmosphere is very inviting, the sort of place where you linger while time just slips away. Excellent!

Service at CATO is unobstrusive, professional, but slightly forgettable. Staff are efficient, quietly and quickly going about their duties, be it taking orders, clearing empty / dirty tables, or arranging the table to serve dishes. While I have nothing to fault with the good service, there is very little rapport, and thus, little to tie diners to making a connection.

Food at CATO is modern Asian / modern Singaporean, with a small menu that changes regularly to keep repeat visits interesting. The culinary team behind the kitchen has over 30 years of experience, and serves up contemporary food, combining international flavours on the plate. This also means that taste can be hit or miss, depending on personal preference. Portions are decently sized, and may be shared. Prices are reflective of most other restaurants, budget about SGD $47 per person for a meal here.

The extensive list of craft beers and spirits at CATO is their main highlight. The eclectic beer selection varies seasonally, with edgy labels such as Crew Republic, Modern Times, or Schlenkerla, and includes 14 curated selections on taps. Artisinal spirits from over 20 renowned boutique distilleries are available as well, featuring labels such as KOVAL, or High West. Drinkers won't lack choice here, but I notice they don't have cocktails. They also don't serve still water / tap water at all, you can't even order it. Also, their non-alcoholic drinks menu is largely limited to soft drinks or juices.

The Beer Modern Times - Black House (SGD $16) is an oatmeal coffee stout brewed by Modern Times Brewery in San Diego, California, United States Of America. Brewed along with coffee beans that are roasted on-site, this black ale / beer with a brown foam head has a robust, complex taste. It starts out with a toasted grain and caramel notes, which leads into a coffee / espresso, chocolate, and hazelnut taste. Unique and creative! Highly recommended!

The Prawn Bisque With Home Made Cod Fish Ball & Coriander Leaf (SGD $12) has a medium intensity to the crustacean soup / broth, with a medium thickness in terms of texture. Decent enough, I understand it can be ordered as either a soup / broth course, or as a shot. More interesting was the cod fish ball, tasty with the aroma of spices, slightly crunchy outside yet soft inside. I would totally order this on its own as a bar snack!

The Crispy Squid In Thai Style Glaze (SGD $12) is possibly the best bar snack I've eaten here. Fresh, whole baby squid, coated in a savoury flour and spice batter, seasoned with fish sauce, then deep fried till crisp and golden brown on the outside, yet still tender and meaty inside. Excellent, completely unstoppable. Highly recommended!

The house special is Aunty Jasmine's Fish Curry (SGD $25), featuring tender, flaky, milky-white New Zealand Ling fish, surrounded by okra / lady's finger, eggplant / aubergine, carrots, yellow squash, olive infused caviar, chunks of bread, and garnished with fried onions. The star is the secret family recipe fish curry, thick in texture with a solid savoury spicy hit, when poured over the dish, enhances the entire flavour. The only let-down in this dish for me was the rather tasteless bread, though it's meant to be dipped in the flavourful curry, so it still balances out. Likely the standout main dish here, highly recommended!

Prawn Bisque with Homemade Cod Fish Ball & Coriander Leaf ($12)

Presenting a tapas menu or we could say as a starter of dishes. 
Using a prawn shell and a mix of fish ball topped with a Coriander Leaf on top of the dish.
In another words, it can also be a soup. The portion is as small as like an espresso cup,
just a one short drink and done . The sense of fragrance spread in my mouth.

Garlic Fries ($8)

Forget about truffle fries that mostly have in everywhere. Great serving of roasted garlic with a mix of cajun seasoning. Something new for fries munching. Some people don't like a garlic smell but absolutely the smell is not strong, conversely it become a favor smell.

It is exactly not just a simple vinegar salad dressing with a chicken and noodle from the looks. We can't judge it until you try it. Just take a few pieces of noodle and WOAW !! you can taste the heaven ghost chili. The spiceness was really numb my mouth and heart.

I stopped on the green noodle and took more on the tender meat as well as green vegetable which to wash up spiciness on my mouth. The smoked chicken was their home made from chinese tea. Awesome salad of different layer of flavour: smokey, spicy and a bit of sweetness.

Acai Cured Salmon ($18)

Exclusive "superfood from Amazon rainforest" which have a pretty good of food for us in a some way. Salmon is really fresh and though it is a bit of salty like other places, sometimes the salmon is cooked in a bit salty way, but definitely worth to try ! liked ! especially it is served with a marinated starfuit cevhice and Acai jelly from amazon.

Steam Baked Pork Cheek ($28)
Delectable Tender pork cheek wrapped with a fata cooking oil that served with a seasonal vegetable and dressed along with mushroom & port wine mustard sauce. It is my favorite sauce ! Tasted more like a mushroom sauce which not so creamy, just nice for the dripping of its soft meat.
