Exceptional gyoza, also known as guo tie, are known to be overflowing with soup and drips down your mouth once you bit it. Those are usually referred to as steamed guo tie, whereas there are also those that are fried, which are not as wet on the inside as the steamed ones. This stall gives us the best of both worlds by being crispy on the outside and moist on the inside. Given the chance, this would well replace mcnuggets for me price-wise.
