Kway Chap is one of the dishes selected for the City Food Hawker Hunt 2013.Kway Chap (flat, broad, rice noodle sheets) are often eaten with pig offals.
A traditional dish frequently eaten for breakfast and lunch in Singapore.
Aside from Kway Chap this stall also served various types of boiled soup using pork ribs.
Many may turned off by the mention of pig offal and/or various parts of the pig organ meat.
Most importantly is the skill of cleansing some of these pork items and the braising ofgood quality sauce to go along with this dish.
Many may have the misconception that all the pig parts are boiled or cooked together.
The kway chap I ordered from the Pig Soup at Giant Mart is quite good. The dish consists of pig intestines, braised pork, smooth pork skin (good collagen), braised eggs and braised bean curd.
There were no off putting flavour but very clean-tasting of the intestines. The braising sauce was slightly salty. The kway is nice and smooth. Wow the chill dip is suitably tangy and appetizing.
