If you do not like cold raw oyster, the oyster omelette would be quite ideal for you. Beaten eggs are mixed with abit of corn starch and bring to pan fry, wihch the texture is really crispy outside with some fluffy feel in between it. The oyster used is big and fresh and was slightly cook over the stove at the end of the pan frying stage which has slight cooked the oyster and yet remain the juicy and 'poke' effect during your first bite. Lots of chinese parsley are top on the wel done omelett

Lots of chinese parsley are top on the wel done omelette which enhance the flavour and is really fragrant. The chilli sauce is slightly dilute but yet is spicy and alittle bit of sournes in it.
