Ingredients:
600g Pork ribs (soft bone)
1 egg
40g Lam Yu (red fermented bean curd)
20g MSG (optional)
20g sugar
3 tbsp Chinese wine (hua tiew chiew)
3tbsp “Mui Kui Loo” wine
1/4 tsp Bicarbonate soda
A dash of white pepper powder
A dash of coriander stem (chopped)
A dash of shallot (chopped)
A dash of garlic (chopped)
50g potato flour
20g corn flour
Garnish
Crispy Lettuce
Method
1. Marinate pork ribs with all the seasoning for 2 hours. Deep fry until golden brown.
2. Garnish with crispy lettuce.
