1. Cut the roots of the enoki mushrooms 2. Wash and drain dry for at least 15 minutes 3. Mix all other ingredients in a bowl 4. Coat the enoki mushrooms, separate mushroom strand by strand 5. Heat oil in HappyCall Pan with medium fire 6. Put coated enoki mushrooms to fry (close HCP, leaving a gap to let moisture escape) 7. Fry for 1 - 2 minutes, till golden brown in colour, remove & put on kitchen papers to absorb any extra oil 8. Dish and serve
