Palm Beach Seafood Restaurant first sold chilli crab in the 1950s, and then the family running it sold the restaurant in 1984. Now it’s operating as Roland Restaurant at Marine Parade, named after the son of the chilli crab recipe creator Madam Cher Yam Tian. In comparison to other versions, the chilli crab here is rather spicy so if you like it hot, you’d appreciate the way Roland does it!

Also claiming to be the inventor of chilli crab is Ponggol Seafood. According to restaurant manager Mr Ting Cheng Ping, his father Mr Ting Choon Teng came up with the innovative recipe. Ponggol Seafood’s chilli crab doesn’t have a starchy consistency like some unfortunately do and has the right amount of egg in the mix.
