A Sanctuary Unlocked: Quayside Isle

Embrace the journey into Sentosa Cove and check out Quayside Fish Bar & Bistro (QSFB), a place that is currently not ventured by many during the weeknights. This is the only outlet in Singapore and it’s located within Quayside Isle (within Sentosa Cove). Nestled within this chic zone, QSFB has both interior and alfresco settings to suit your preference.
We were treated to a 3-course, sinful and sharing session with some of our OpenRice/OpenSnap members. Each course had a Cocktail pairing to boot!

Tuna Tataki | Salad of the Day | Rekorderlig Cider
For starters, Tuna Tataki, Salad of the Day and Rekorderlig Cider were served. Tuna Tataki was served with pear crumble, wakame seaweed, a tad of avruga caviar and edible flower, and a side of Yuzu mixed with sweet onion sauce. The Salad of the day was a symphony of grilled tiger prawns with salted and pan-seared scallops. Technics to cook the food ensured that the freshness of the prawns and scallops were retained. Rekorderlig Cider comes in 2 flavours – Strawberries & Lime or Wildberries, was a refreshing start that included fresh fruits and chunks of ice cubes when served. The lightness of the Rekorderlig complimented the starters, with its smaller dosage of 4% alcohol.

Baked Barramundi | QSFB's Signature Chilli Crab | Sex at Quayside
Main Course was then served, Baked Barramundi and QSFB’s Signature Chilli Crab Linguine. The Baked Barramundi (fish) was cooked to perfection, with the outsides crisp and insides tender. Like their Starters, the Barramundi was served with pumpkin puree, poached pear reduced into red wine, lobster butter sauce and fried chorizo was sprinkled on the fish adding onto its crisp exterior. For the pasta dish, QSFB’s version of the local favourite included a full crispy softshell crab and chunks of fresh crabmeat in light tomato based sauce with just the right amount of spice. The host’s cocktail pairing for the main course was Sex at Quayside – a mixture of proscecco, peach schnapps, cranberry and orange juice with cherry toppings. Sex at Quayside was definitely a stronger dose of alcohol to fit the weight of the main course, yet the tropical and bubbly feel to it kept the drink enjoyable with the main course.

Homemade Tiramisu | Chocolate Dream
Then came - the dessert, with its own cocktail pairing as well. Coined as Homemade Tiramisu with chocolate shavings and a citrus raspberry topping. Probably one of the softest and just the right smoothness a dessert could have. The chocolate mood was further enhanced with a shot of Chocolate Dreams - a concoction of vodka, Kahlua, cacao brown, baileys, milk and rim filled with chocolate. It’s safe to say we had one of the best scrumptious and fresh seafood dining at Quayside Fish Bar & Bistro, a place ideal for one who seeks a semi-formal/casual dining experience for quality food and pleasant atmosphere over weekday nights.
