The weekends are for lazing a little longer in bed, and feasting like royalty. While I do love eating, I enjoy the process of cooking up a storm as well.
This recipe serves 4 and is perfect for those Saturdays when you just want to invite a couple of friends over for brunch. Impress them with a fancy-looking skillet full of cheesy goodness.
Ingredients:
2 tbsp olive oil
1 large onion, diced
3 garlic cloves, diced
Button mushroom, sliced thinly
Sausages, sliced thinly
Cherry tomatoes, halved
3 eggs
3 cheddar cheese slices
3 cheese wedges
1.5 cup milk
Toasted bread to serve
Method:
1. In a large skillet, heat oil over medium-low heat. Add the onion and garlic, stir fry for a minute or so until fragrant.
2. Add in the sliced tomatoes, sausages and mushroom. Stir-fry for about 5 minutes.
3. Add in the milk and cheeses. Let it simmer until the sauce has thickened.
4. Gently crack in the eggs evenly around the pan over the sauce. Let it simmer until the eggs are just set, about 5 minutes.
5. Serve with lots of toasted bread/pita to mop up the sauce!
