Celebrating Culture & Heritage Through Food Singapore Food Festival 2010 spotlights specialty dishes of Chinese dialect groups in Singapore By Amanda Val Ng “Eww! What is that smell!” That’s probably what you will hear if you are at The Singapore River in the 1980s. Today, Singapore presents to you a clean-up and beautifully populated Reservoir that is surrounded by shopping malls and office buildings alike. The Singapore Food Festival (SFF) is a showcase of this nation’s multi-culinary concepts and “third flavor”, expressed our very own food expert Mr KF Seetoh. This year, SFF brings to you the food flavors of the 5 Chinese dialet groups topped with the culture and culinary display of the different ethnic Malay and Indian dishes all along the stretch of The Singapore River. “What excites you?” if I may ask. Is it visuals of beautiful cuisines, smell of the combination of different ingredients or is it a display of culture with great company (company of food that is)? If your answer is any of the above, you are in for a treat. Mark it down on your calendar; for one day only; 25 July 2010; 5pm to 10pm, SFF presents to you the Singapore Chinese Dialect Heritage Feast. Located at Clarke Quay Read Bridge, this feast features buffet lines of the five different Chinese Dialect:
Scrumptious Fried Hokkien Noodle
Bring in the Hokkien cuisines. Be stolen away by the “Popiah” that promises to tease your taste bud with the sauce, fill your tummy with the turnips and fillings. Or run away with the Hokkien “Char Mee” that is so delectable that you want to steal the recipe from the chef. “OrNee OrNee” sounds like “Only Only”? “OrNee” (Yam Paste) is a famous dessert from the TeoChew dialet group. Made of Yam, after long hours of stirring and stirring in the wok, the Yam paste is so well serenaded that it will simply melt away in your mouth. If you love food that’s complimented by sauces and paste or just loved them preserved, Cantonese cuisine is what you are looking for. May I introduce to you their signature dishes: “Shao Lar”. “Shao” is a general term used to label their prepared poultry - chicken, duck and pork. “Lar” is the term used to label their Chinese sausages. “Shao Lar”, put together with other staples, the game is on!
Cantonese Century Egg Congee
Have you heard of “Abacus”? Back in the olden days, they do not have electronic calculator. They use beads thats put together in a wooden plank to do calculation. That brings about the name for the dish “Suan Pan Zi”. Made of tapioca and yam, soft on the outside, chewy on the inside, stir-fried with some meat… Ahh… the good old days in the Hakka Community. Hainanese! Pretty sure the next thing that pops out would be “Hainanese Chicken Rice”. Do you know, in the beginning the rice are actually ball-shaped? Keep a lookout for this authentic dish! The Malay style of Mutton Soup you’ve heard. But what about Hainanese style then? On the same genre yet on the lighter side, they bring to you the more cooling style with less intensity yet oh so flavorful. Singapore Chinese Dialect Heritage Feast charges at $38 for Adult, $22 for children (below age of 12). This year’s SFF also features events such as Clarke Quay Food Street, Singapore Chinese Dialect Tingkat Cruise and Singapore Chinese Dialect Street Snacks where delicacies and traditional puppet shows are put up.
