This coconut-cream coated cake had just the right balance of the fragrant Gula Melaka in both the mousse and the sponge, making it difficult to stop at one slice.
The traditional Valrhona Chocolate Logcake (available each xmas) was mediocre and the sparse amount of chocolate pearls did not help to enhance the texture.
The Rum and Raisin Log cake was both good and bad. The rum mousse stood out with sufficient rum taste but the raisins were plain and the vanilla custard centre had too much gelatine and became chewier than a marshmallow.
