Last time I drop by at Cook & Brew, was in 2014 when a German Executive Chef was in charge. Currently, Cook & Brew is helmed by Executive Chef Aaron Foster, a proud Canadian who bring his love for home town produce and his interpretation of comfort food.

Recently, Cook & Brew introduced a three course set dinner menu, priced at $55. This include a starter, main course and dessert.

I started with Heirloom Tomatoes & Plums (Buttermilk and gorgonzola cheese dressing, butter curd, pecan brittle). First impression, beautiful presentation of the salad, with fresh tomatoes and plum. I thought that the gorgonzola cheese will be subtle as I can't really smell it at first. However once I took a bite, the pungent flavour of the blue cheese burst in your mouth. The fresh tomatoes and plum does well to offset the blue cheese flavour. If you find the blue cheese is too strong, you can actually eat the fruits and vegetables without the dressing. A must try dish for cheese lover.

Main Course was The Chicken Parm (Breaded basil and yoghurt marinated chicken, mushrooms, sweet peppers, tomato sauce, buffalo mozzarella). One of the most traditional comfort food and one of the best that I have tried. The crust was thin and crispy, while the meat is tender, succulent and well-seasoned. The melted buffalo mozzarella added to the richness of the dishes, while the tanginess of the tomato sauce with bitterness of the rocket salad provide the balance to the richness of the chicken. Yum Yum, two thumbs up. Please note that the portion of the main course is Canadian size, instead of Asian size.

Dessert was Home-made Raspberries Chocolate Layers Cake (Vanilla sauce, fresh berries, house-spun raspberry sorbet). Cook and Brew version of layer cake. A nice taste of dark chocolate, with berry flavours sponge cake. The raspberry sorbet is very tangy, yet refreshing provided a perfect ending to the dish. I did not manage to finish the cake after a big portion of the main, but I did polish off the sorbet.

On top of the set menu, we also sample some item from the bar menu, which was obvious has Canadian influence in it. My picks for the bar menu are: Poutine “EH” ($16), a Canadian comfort food and popular cure for hangover. This hearty dish normally only consist of French fries, cheese curds and gravy. At Cook and Brew, Chef Aaron up the ante and introduced pulled pork into the Poutine. Rich, tasty and comforting. Definitely a must-try dish here.

Whipped Buffalo Milk Ricotta ($14). Something for cheese lover. Unlike the starter, the cheese here is creamy and mild. Infused with truffle honey, it added sweet and aromatic touch to the cheese. Spread it over the crisp yet chewy grilled bread, making it a good finger food.

Turkey Meatballs ($15). I actually thought its made of pork. The filling is moist, unlike most of the turkey made food that I ever tasted. The pecorino cheese and tomato really complete the dishes.

The atmosphere of this place is still gorgeous. Definitely a place you want to chill out. It has a good view of the Marina Bay, however with the new development directly in front of the hotel, the view of the bay will soon be blocked. The décor is combination of wood, classy and classic furniture. You have the option to sit yourself in couches, dining area, balcony and even the bar.

Overall, this return visit to Cook and Brew definitely a memorable one. It seems the Canadian influenced comfort food really strike the cord in me. The unpretentious and heart warming food really set the standard on how Gastropub meal should be. Cheers!!

HEIRLOOM TOMATOES & PLUMS ($17)
Buttermilk and gorgonzola cheese dressing, butter curd, pecan brittle
Best enjoyed with La Chouffe beer

The strong taste of the butter curd was strangely balanced by the sweet honeyed pecan brittle. It quite peaked up one's appetite.

Best enjoyed with Peroni Nastro Azzurro beer
The bread was soft and buttery, having been drizzled with olive oil. Spread on with slightly sweet and milky spread, it offered another taste on the simple bread.

POLENTA & DUTCH VEAL BRISKET ($42)
Milk braised veal breast, kale, glazed turnips
Best enjoyed with BrewDog Hardcore Beer
The veal was very tender and juicy, accompanied by the milky creamy polenta and the crunchy turnips.

THE MONTREAL BURGER ($34)
Packs a punch with its copious amounts of house-smoked Montreal meat, made by curing beef brisket with cracked peppercorns, coriander, garlic and mustard seed over 21 days, beef patty and red onions, served with fries with Rosemary and shaved Parmesan, and Canadian mustard.
Best enjoyed with Borealis Rare Iceberg Beer
This burger was the chef's signature, but I could tell that it is a meat lover's dream with so much meat in it. As for me, I preferred the fries which I felt was better than the fries that served with the two other burgers. The fries was lightly flavoured with rosemary and topped with shaved paramesan. It smelt nice and more appetizing in taste.

BROCCOLI & BACON CHEESE BURGER ($29)
A treat robust flavours; beef patty topped with creamed broccoli, double thick house-smoked maple-glazed bacon and American cheddar.
Best enjoyed with Grolsch Beer
Never had a burger with creamed broccoli. I felt that it made the burger less dry and easier to eat, when comparing to the other two burgers.

HAWKER BURGER ($32)
Well-marinated char siew-style pork jowl that is sweet, slightly moist on the inside and charred on the outside, crispy pork belly, served atop a juicy beef patty, served with sambal mayonnaise, sliced green pickled chillies, and fries tossed in chilli.
Best enjoyed with Tiger Beer
It was my first time of having a burger served with pickled chilli. The burger was the chef's version of localized burger. It was quite a combination in the mouth with fatty pork belly, the slightly sweet char siew, and the spicy mayonnaise spread on the bun. Interesting explosive flavours.

Hot Chocolate ($8)
A well made drink although I wished that it could be richer in taste.

Overall the food was huge in serving and tasted great, although my jaws felt tired after all the chewing of the burger. The place was relaxing and quiet, with nice view outside. Service was fast and efficient.

Ambience at Cook & Brew is a mesh of posh sophisticated elegance and rustic homely comfort. The dimly lit but spacious interior boasts plush suede leather booths, rustic cowhide armchairs, tufted leather benches, the longest marble-topped bar counter in Singapore, 90-inch flat screen televisions, and floor-to-ceiling windows. Seats are laid out in communal style dining, which is very much encouraged at Cook & Brew, as dish portions are designed for sharing. The best part is the fantastic view of the Marina Bay and Marina South area!

Service at Cook & Brew is outstanding even during peak periods. Staff are friendly and polite, efficient in seating guests, taking orders, and clearing empty plates. The food takes awhile to prepare from scratch, but served quickly. Staff are able to offer recommendations on the extensive wine and beer list, and relatively knowledgable when questioned on the food menu and dish preparation. They are also able to state what sporting events the in-house televisions will be screening for the day.
Food at Cook & Brew is generally delicious and tasty. The menu at Cook & Brew is quite extensive, featuring classic, rustic Western style comfort food, as well as local Asian dishes, served with a modern twist. Several dishes even come with recommended beer pairings! Portions are designed for sharing, not so much individual dining, and prices per portion are reasonable and quite affordable. Budget about SGD $20 - $50 per person for both food and drinks.

The Chili Con Carne Volcano Topped With Cheddar Cheese (SGD $13) is like a Western style Char Siew Bao. The minced beef within is well marinated in a savoury, slightly spicy sauce, while the actual bun itself is fried, with a crisp, smooth exterior and a soft interior. Topped with bell peppers / capsicum, cheddar cheese, and a fresh jalapeno slice, it's a great tasting if slightly heavy appetizer.

The Honey BBQ Ribs (SGD $28) features a slab of perfectly grilled baby pork ribs, sweet and savoury with the taste of the honey marinade and Asian spices like the Rendang rempah. Served with a side of freshly made in-house coleslaw and crisp potato wedges, the pork rib meat comes off the bone easily, and is tender and flavourful. The pairing with Beer Blue Moon accentuates the sweetness of the dish, and works very well together.

The signature German Butcher Platter (SGD $34) contains a huge serving of pork kassler, pork sausage, chicken sausage, chicken schnitzel, sauerkraut, dill pickles, mashed potato, and mustard. Every individual component in this dish was well cooked and tasty, and we were very satisfied with this!

I loved the Almond Nougat Ice Cream (SGD $15) with its praline-like structure, and tasty, flavourful almond nougat ice cream within. Served with fresh raspberries, shaved caramelised almonds, and a condensed milk base, it's so satisfiying to crack open the chocolate shell and watch the ice cream ooze out.

Take On The Spicy Challenge (SGD $20)! Eat 6 hot and spicy wings / drumlets within 4 minutes, and get 1 hour of free beer! There's a reason this is a challenge, a combination of chilis and peppers are used in the making of this diabolical dish, including the world's 3rd hottest chili. The heat and tangy sourness of the aroma hits you up close, and the burn starts the minute you bite into it, building to a mouth numbing fiery crescendo.

Overall, I had a great time at Cook & Brew, and will definitely come back for more! The delicious food, relaxing ambience, and engaging service, together with the view from the area, makes for an unforgettable experience. No surprise that Cook & Brew attracts so many diners night after night, and advance reservations for a seat is highly recommended!
