Walked into the terrace by accident while visiting the flower dome two days ago - had a quick afternoon tea - was impressed by good service and surroundings. Came back tonight for dinner. Waiters recognized us immediately and greeted us warmly. Food was delicious- the pear salad, mushroom croquettes and creamy soup for starters, salmon, beef cheek and trout for mains - all good.

We arrived Pollen at 4:30pm, but no more food provided, only drinks and a little bit cakes to choose, even the waitress told us we can order some sandwiches or some hot food, only the Pollen Tea Set can't order, but when we went upstairs the order waitress told us only drinks and cakes.Don't really understand what is the meaning of ALL DAY menu........  Situated within the world's largest glass greenhouse, Flower Dome @ Gardens By The Bay (free buggy ride and entrance), Pollen occupies two levels within the dome, with the upper level (terrace) serving up a selection of dishes in a garden like, cafe setting and the lower level boasting a proper restaurant with a dessert counter where you can choose to have your desserts and/or view them being prepared. I appreciate the novelty of dining in a chilled greenhouse surrounded by nature and sunlight but would appreciate more greenery being incorporated into the restaurant. Still cosy nonetheless.

 Complimentary Bread - The homemade white sourdough bread sported a crusty surface with a lightly spongy center and came served with hummus and mustard butter; both of which I'm originally not quite a fan of. However the mustard butter surprised me; smooth and creamy with an ever so slight hint of mustard. Pretty decent.

Amuse Bouche - Our amuse bouche for the afternoon. a steamed bun with Gorgonzola and truffle oil - fluffy and chewy with a hint of truffle oil and a mild pungency of the cheese. A rather interesting and decent start to our lunch.

 Cured Trout, Dill Sago, Japanese Cucumber, Ikura, Yuzu - Topped with frozen (by liquid nitrogen) cucumber (tasted like sorbet) for that smokey visual effect, the cured trout had a delicate sweetness to it coupled with firm, mildly chewy flesh. The saltiness came courtesy of the ikura (fish roe), balancing out the mild rawness from the cucumbers. Nice.

Seared Foie Gras, Poached Quince, Walnut Cream (+$12) - Though quivery, the foie gras could do with a little more searing on the surface whilst the sweetness of the walnut cream and walnuts helped to cut through the gaminess. The latter also provided a nice crunchy element. What was new to me was the quince, which tasted a little like peach to me, albeit a little tougher. It apparently belongs to the same family as apples and pears and can't be eaten raw. Most interesting.

 Roasted Barramundi, Cauliflower, Grapes, Curry Cream - The roasted barramundi was pretty good; crisp skin coupled with firm, flaky flesh and drizzled over with a non spicy curry sauce, all on a bed of deliciously roasted cauliflower. I'm usually not a huge fan of fish but this was interestingly good.

Roasted Butternut Risotto, Honey Croutons - Although I liked the butternut risotto for its creamy al dente-ness, chewy honey croutons and crunchy pistachios, I couldn't quite get over the fact that there was no protein in it; a vegetarian option. Portions were quite substantial and too much proved a tad nauseating, to me at least.

Salted JAAL Chocolate - The JAAL in this dish presumably stands for Jason Atherton Andres Lara, the name of the owner and the pastry chef. Not that it had any bearing on this dessert, which featured an overly salty salted caramel fudge mixed in with chewy rice krispies, peanut powder, cocoa soil and topped with a scoop of unsweetened cocoa ice cream. The end result? Lots of drinking water required.

At ~ $143 for 2 pax, lunch was a pricier than your average set lunch affair but I guess the complimentary entry into the Flower Dome ($12 for residents) and buggy ride does make up for it. Food overall leans towards fusion and comes across as competent but not wow. I was honestly expecting a little more in terms of flavours. Service was good though and I personally like the relaxing feel of the restaurant. Will I be back? Maybe, but probably not in the near future.

VERDICT

A decadent lunch affair marked a great year for my work team. We had the new year meal which was pricier than usual their usual offering, you can check back on their website to see what are their offerings.

The food was perfect. It was the kind of meal which blows you away with flavours that you wouldn’t be able to get from anywhere else; as each beautiful plated dish was probably a work of art for the chefs as they beautifully balance the flavors.

Definitely a place I would recommend for those who are in the mood to indulge, anniversary dinners, birthday celebrations or even a company lunch. It is probably a little out of the way, but there is a buggy to pick you up at the taxi stand to get to the restaurant directly.

 Since we are in the area, we decide to check this place for hi tea. It offers a Pollen Afternoon Tea set for $38++ which comes with a choice of coffee or tea, served free flow.  We start with tea which I select Flower Power which tastes flowery and light, while my dining mate selects Earl Grey. It is each served in a pot and is refillable, which is done often by the staff.

The brioche is very soft and buttery. The plain looking horse radish cream spread on the toast, just makes us think of seafood with a bite. The scotch egg here has a rather salty taste which reminds me of duck egg.

The eclair which is filled with fresh strawberries and whipped cream, is simply heavenly. Light and juicy. The tea cake is very unique too, decorated with metallic and sweet tasting rocks on top. The marcaron is a disappointing one as the filling has melted and quite sticky to eat.

It is quite relaxing having tea in a place surrounded by flowers. I have spotted a bird flying arcoss me. After the meal, we also take a visit around the Flower Dome as Pollen is located inside the dome.

 Pollen also offers free buggy transportation to the nearby MBS hotel, which we take up after visiting the dome. Overall great services and good food. I will be back again.

 Though Pollen has been around for at least 1 year now and has received rave reviews from both the media and friends alike, I had not found an occasion special enough until my sister's birthday last week, to try the Mediterranean-inspired modern European cuisine served here. Reservations are highly recommended so that the restaurant can arrange a complimentary buggy-ride for you right to the doorstep of Pollen. And especially if you are dressed to the nines with heels and all that, that ride is absolutely necessary. Alternatively, you can also choose to take a slow 15 minute stroll from the main entrance.

We had the Festive Set Lunch (available from 1 Dec 2014- 1 Jan 2014) and paid $65++ for a 3 course meal which ended off with coffee/tea and Petit Fours.

Our server started us off with an amuse bouche of warm homemade baguette roll with seaweed butter on the side and Parmesan Truffle Rice. We particularly enjoyed how the umami rich seaweed butter glided on the slice of baguette so smoothly and every bite was gloriously satisfying. A simple pairing that scored points with both of us.

 Probably the best course of all three, the mains were the highlight for me.

The first we had was the Poached Cod Fillet which was thick, fresh and sweet. Everything you could ask for in the taste and texture of a good cod, they nailed it. Complimented with some Eastern influence as promised by their concept, the fillet sat on a bed of savoy cabbage and light curry sabayon. The hint of spices was unmistakeable and brought this dish to a whole new level of exotic.

 Next was a Bronze Turkey with Pork and Apricot Stuffing- a necessity in all festive menus, the turkey was moist with every bite and sweetened so subtly by the apricot stuffing. Loved how the confit carrots and brussels sprouts added to that rustic overall look.

 For desserts, JAAL was a tad intense and colourful with Pollen 76% chocolate. The bittersweetness of the chocolate with a slight acidity from the dark plum and playfulness of the puffed rice pulled this whole dessert together with flair and elegance.

 Overall, food and service were both impressive. Contrary to multiple reports that the latter was spotty and inconsistent when Pollen first opened, my experience this time could not have been more different and I was very well looked after by all the servers. A place I would definitely recommend to bring that special someone.

An easier way other than trudging though the gardens and ending up hot and sweaty would be to spot the buggy near the visitor's centre and hitch a ride. My colleague and guest ordered the Rangers Valley 300-day tenderloin, wagyu beef cheek, chicory, parmesan cream ($78). Feedback heard was that the generous hunk of beef was really tender.

My main course was the Challandaise duck breast, braised leg, miso butterscotch, heritage carrots, orange gel ($70). The duck breast was done pink and juicy with a thin layer of crispy skin.

An added perk when you dine at Pollen is that you get a complementary visit to the Flower Dome (tickets at $12 for adult local residents). As rightly advised by the staff at Pollen, the Flower Dome looks better in the day - it's really dim at night, so be sure to time your visit if you're planning to take advantage of the offer.

Overall, the meal at Pollen was fine and the service was impeccable, but it was nowhere memorable (except for the prices maybe!).

 My meals took place in the upper deck; some called it “sunny patio”, where the bar sits. Why chose the bar area? I prefer the roomy hemispheric roofing – the glass dome ceiling shelters me instead of the concrete pillars downstairs. I get to enjoy a more magnificent view of the Singapore Flyer and MBS, along with the sun setting afar. Less of seeing people footing on the walk path outside the restaurant. More, I was surrounded by Pollen’s very own mini herbs garden – thyme, lavender and even the 1000-year old olive tree! The temperature is cooler than the ground’s, a regulated climate which can dip to 17-20 degree Celsius in the evening. It can be chilly; so ladies, a shawl will helps when you are dining at the bar. But the coolness will not dampen your dining spirit as your visual gets warmed by the bright looking tiles, informal table settings and without plush carpets -full of Mediterranean vibe.

 To ease our hunger, warm dinner rolls were served. I loved the sliced sourdough for the tangy rye and its crusty texture while the portioned wholemeal baguette was a lot more chewy. We enjoyed the slab of butter served on the small ridged board – pale looking but was silky-smooth and mild-mannered. The Sicilian olives were a little raw & hard while the cod potato dip compliments the bread with a briny taste. Side note: As the upper deck temperature is cooler, the bread turns cold at an amazing rate, so do not hesitate to ask for a reheat. Anyway, the wait staff was diligent enough to have done so without prompts. Very attentive).

 We started off with Salad of buttered lobster, pasta, seaweed (of which I opted out), maple dressing. A very refreshing salad with unpretentious sweet tangy seasoning, less of a maple flavour. The homemade pasta has an unusual texture of its own – flabby and soft noodles not the regular al dente that one would expect, nonetheless very gratifying. Then comes the sweet & succulent lobster meat, so fresh that you could smell the ocean breeze. Fighting against it, the baby Romanine was crisp to the core, served in total freshness.

 Scallop carpaccio, cucumber, apple, horseradish snow – much-hyped dish @London’s Pollen street Social. What makes it such a hit? The modern culinary technique employed to make it stunning and pleasurable looking, along with the lingering taste it brought about. At one point, I’d thought that I am eating it alive – the raw scallop slices were meaty and tasted sweet which further accentuated by the vinaigrette dressing. Floral-inpired; the teaser was dressed up in colorful petals and dills, accompanied with the semi-frozen cucumber slices – as beautiful as its name sounds. I am so captivated by the horseradish ‘snow’ – using new culinary technique; where the buttermilk was added to horseradish juice & thickened with cornstarch, thereafter frozen and pacotized, and later grated microscopically when served. This dish is as pleasing to the palate as to the eyes, I am hoping for some headphones to come along soon. A total bliss out.

 Roasted monkfish, creamed olive oil potatoes, lemon conserve, orange grenobloise – everyone thought it was an uninteresting dish but they were wrong, it was a truly comforting one! The ponderous fillet sits atop the silky creamed mash potato which was rich and gratifying. The fish tasted oceanic; fresh and moist despite being roasted. You get to savor the sweetness in the meat which brought about by the lemon dressing. The orange flavored croutons further intensified the dish with more flavors and crunch.

 Roasted pork belly, broad beans, slow-cooked squid, chorizo – do not make comparison with the Asian Siew Bak that you would eat at your favorite stall. This dish has its own uniqueness; the pork was well-roasted and the meat wasn’t tough. Somewhat moist, thanks to that thin layer of fats under the crackling pork skin. The chorizo sauce enhanced the overall faintly seasoned meat, making it wholesome. Cannellini beans were cooked to tender to fill the loose space in your gastric.

Nothing could hide my excitement when it comes to dessert moments. I can’t wait to announce that I am done with my courses and need badly to head to the subterranean. The wait staff got me right away and gave signal. Christophe appeared instantly and offered to escort us to the ground level via the side lift behind the bar. The main dining room – clad in dim lightings, dark wooden tables & rattan chairs; casual in a classical manner.

We were placed at the center of the 9m long dessert counter with Chef Andres Lara standing right in front. He greeted us somewhat shyly and handed us the menu. Jokingly, he said we could have everything here or as much as we wanted; I wished too if I haven’t had my meals.

 “PB&J” – Peanut butter and cherry yuzu sorbet; topped the dessert list in London’s flagship which I certainly wouldn’t want to pass it up. Dreamy as it looked but serious in its taste! Sounds like a big diversion between the sweet peanut butter parfait & sour yuzu cherry sorbet, they duo did harmonize when eaten together. The after taste of yuzu has always been unique which I don’t know what to make of it. Lara has been very creative when comes to plating – pomegranates, black raspberry & floral petals, everything looks so whimsical.

 For a more witty whip up; Bitter chocolate banana, white sesame ice cream, caramel nitro, definitely wow you with Lara’s witty modern technique. I was inspired by the print “nitro” which lured me into trying (I am such a follower of molecular culinary these days that I went crazy after it). The bitterness in the chocolate crumbles amid the ice-cream of its own kind, interfused with the sweetness found in the white sesame ice-cream. Although the sesame flavor was less prominent, its smooth and creamy texture made good. The banana bits add crunch to the otherwise velvety sweets. For all you know, I’d love that “vaporing effect” from caramel; accordingly it has been dipped in liquid nitrogen for a quick freeze. I hope the mist did somehow veil my blushes.

For a sweet ending, Lara gave each of us a passion-fruit milk chocolate popsicle. The passion-fruit - a tad too tart but was average out by the sweetness of the milk chocolate shell. (My friend had a similar pop ice on the next day, but with
