In order to tell if a ramen is good, I always choose the original taste, without many add-ons, but just a plain nori (a very big piece of seaweed). And of course I add in sesame to enhance the taste of the soup!
Chicken soup is not that strong compared to those made from pork bones. Lighter taste and not so saltish. Very clear good essence of chicken! Choose the texture of ramen to hard, so it will not get soggy easily. The only thing I hope is the soup can be little hotter because as the soup get cooler, it will become very oily.
