Seems like liquid nitrogen ice cream has been a hit these days. Just Like It! is one of those stalls that sell this type of ice cream. Vanilla Oreo - $3.90. What can go wrong with Oreo? It was a perfect mix between vanilla and Oreo in a cup. The ice cream itself was smooth and not overly sweet.

For the price of almost 4 bucks, I feel like it's very worth it. You pay for the experience of watching the making process of the ice cream, moreover you also can enjoy the goodness of freshly-made ice cream without artificial ingredients.

Despite the price, this is a recommended place for ice cream freshly made on the spot (slow it may be because it's only made upon order, it's without any artificial flavoring, coloring, etc. and it's original!).

We were shopping at AMK Hub on one weekend and saw a group of people, dressed like scientists, surrounding a counter. I was wondering why the “lab workers” were in a shopping mall. Just as we approached the counter, vast amount of "smoke" came out from a mixer. Then we realized it is Liquid Nitrogen Ice Cream! I remember seeing it in one of the Polytechnics’ Open House!

Anyway, it is a new method of making ice cream. A Liquid Nitrogen (LN2) is added to a mixture while stirring it using a mixer. This process fast freezes the mixture into semi-solid state, like an ice cream within minutes!

They highly recommend their Durian flavor and so we ordered that. After making the payment, that's where the excitement began, as we monitor how our Liquid Nitrogen Ice Cream was being made. The Liquid Nitrogen Ice Cream is very smooth and creamy. They have added real durian flesh into the mixture hence the flavor is very strong. Yummy!

The taste of the ice cream is normal, and the originality only lies in the way that they make it. I bought the voucher from Qoo10 ($2.90), I add on another $1 to upgrade it to the durian flavor. The whole process starts with a liquid solution. After they pour into the mixer, they used liquid nitrogen to deep freeze the mixture and put the durian puree (they are so stingy with the puree!) in. It is magical to watch, but not really when you taste it. The ice cream is good, but not to the extent that i will pay so much more extra for a cup of it.

There's this shop with staff clad in scientist robes doing "experiments", similar to what you'll see in a scientist's lab. It caught my eye for a long time. Initially, everyone who walked past took a glance, walking away eventually.

However, I noticed that it has been increasingly popular these days! Huge crowds gather as onlookers were curious what this mysterious shop was all about. I was one of them. Like they say, Singaporeans love to queue and be kaypoh, right?

What they do is make ice cream fresh from scratch, so you have to wait for quite a bit. No worries because there is a queue number system. They put the ingredients into the ice cream mixer machine first. Cold liquid nitrogen gas was then blasted over the liquid mixture to freeze it.

My Say:

The ice cream had a velvety and smooth texture compared to normal ice cream. I feel that it was also "healthier" since there were no sugar added, bringing out the natural sweetness of the ingredient. This Durian Durian ice cream I had was made from pure D24 durian; you could taste some of the meat! It was pretty palatable.

New PopCorn, one of their signatures.

The balance in flavours was well-tipped and there were popcorn bits in the ice cream to give it a gritty texture to the smooth ice cream. There wasn't much of the popcorn taste though, it was pretty mild? You could also see that as compared to the Durian Durian, there was a huge difference in the amount of 1 scoop.

Apart from the gimmick concept of seeing your order freshly made before you, did the liquid nitrogen ice cream taste better? Hmm.. I would say it's so-so. Moreover, I think they made the ice cream cup by cup, taking up a lot of time. But to each his own!

The secret is they use nitrogen to make the ice cream. It is a concept from Australia and 1st in Singapore. I tried because of the novelty. You see all the staff dress in scientists attire, the container they use is the lab tabung uji. 1st when I saw it, I feel like too chemical and totally dun feel like want to have it. This time me and my friends passed by and she was attracted by this new idea. Since we were sharing, why not. We ordered common like mango taste. The Chef'choice is the New Popcorn. You can find the durian on the list too.

You can stand there and see how your ice cream is made while waiting. 1st the staff will pour the nitrogen out then add the mango flavour to it then mix it well. You will see all the cool gas coming out from the mixing bowl. After few mins, your ice cream is ready.

How it taste? It tasted like normal ice cream but smoother. Not too sweet but I don't really like it as the mango flavour tasted a bit artificial. It said on the poster:

The additional ingredients in the ice-cream are weighted by an electronic scale, while the sauces contained in the bottles goes straight into the mixer and when it starts mixing, everything gets shrouded in fumes and then the ingredients get added in before the final mix and out comes the ice-cream. It is said on the poster that the ice-cream made this way has no sugar added, no additives and no colouring; all of it just original taste.

New Popcorn is one of the most unique flavours that they have come out with; did not recall seeing a similar flavour elsewhere. This one had a nice salted flavour in it, similar to the likes of Salted Caramel but way lighter. While the ice-cream had a light taste, the sweetness of actual caramel popcorns kick in when you go into the second scoop when you find a generous serving of caramel popcorns in it. This sweet and salty flavour definitely goes well with each other and are pretty much light on the palate.
