I had lunch at Putien and I loved the food there, particularly outstanding is the spinach with three egg dish, and it is not because I have a particular liking for this dish. The spinach just tastes so much more flavourful and rich when cooked with this three eggs. It is one dish that is very visually appealing and also tantalising on the tastebuds with the different textures of the egg and taste. In case you are not aware, the three eggs are the duck's egg, the chicken's egg as well as the salted egg. The duck's egg is always cooked until the egg white is like jelly and it sort of reminds me of collagen. It is very smooth and just very yummy. The spinach is also not overcooked, it is soft yet not limp. Putien's version of it has more eggs than other restaurants which makes this dish my favourite dish all time and a must order at Putien.
