The Hakka-style TAO Pig Trotters with Sea Cucumber ($48++, good for 4) is a burst of homely flavours, tender from hours of braising and with rice wine and sea cucumber and best eaten with a side of white rice. Drizzle some of the brown sauce on top of the rice to have with the tender meat and you are good to go.
