Not worth my time and also money. They all said that Ippudo is one of the best ramen restaurant and finally opened in Singapore, despite of that, I had to even queue even it's after 3pm. I'll say the service is good, the staff are really attentive, but I feel that the ramen is not that spectacular as what everyone said. It's expensive for no reason. The pork belly is hard and there's no flavor in it. It feels so dry. The portion of the noodle is relatively small as well.. I think I finished it i

Overall would just be "normal and nothing special" for me this time.

I have a weakness for Japanese cuisine. Or rather a soft spot for it.

And so when Estelle from Openrice sent an invite for a food tasting at the popular ramen restaurant – Ippudo – I could not resist to accept the invitation!

I arrived and saw this looooooooooooong queue. If there is anything worth queuing in Singapore, it’s good food.

Ippudo SG opened shop in Singapore on 12th Dec 2009 and is the second overseas venture after Ippudo NY. Its’ history hail from Japan’s ramen capital – Hakata – and is creating a stir all over the world. Besides 65 Ippudo restaurants in Japan, they have international stores in Hong Kong, Taiwan, Seoul, Sydney, Malaysia and China.

We were invited to the Mandarin Gallery branch and the ambience is very typical buzzing Japanese restaurant. Loud greetings, semi-see-through kitchen, bowls and bowls of hot steaming ramen.

Seating is limited to 57 seats with a small private VIP room. Be prepared to come early during lunch and dinner hours or simply come after peak hours.

Appetisers & Sides:

Goma Q – Fresh Japanese cucumber with a special sesame sauce. It’s a great cold appetizer to start with. The fragrant sesame sauce added spice to the otherwise plain crunchy cucumber. I like the presentation and the precision in cutting each slice into almost equal sizes. As usual, hats off to the Japanese culture of fine presentation.

Crispy Corn – I have no clue how this is done. It seemed deep-fried with a light batter to a crisp and sprinkled with some addictive paprika-herb-alike powder. One is probably not enough. I had two! (or was it three? I lost count).

Spicy Shrimp Mayo – Big succulent prawns deep fried with a light batter and served exquisitely with a home-made spicy mayonnaise sauce. Home-run type of combination. What is there not to like about such a dish. Yummy!

Beef Tataki – My favourite of the night. Pan –seared tender beef slices served with a tangy sauce and special dip. Best eaten with the bed of non-pungent fresh onions. I went home dreaming of going back for this again.

Finally – the stars of the night – RAMEN!

First up: Shiromaru Motoaji – a white pork-based broth ramen. My preferred choice of the night. I like it straight forward; classic Hakata-style. Light broth without porky taste. Chashu is tender and cabbage is aplenty.

Next up: Akamaru Shin-aji – a bolder red broth seasoned with garlic oil and Ippudo’s secret paste (Umami-dama). Decent choice if you are in the mood for an enhanced type of ramen.

Last ramen dish – Karaka-Men. This is the original tonkotsu broth with spicy miso and ground pork. If I go in a group, I will get someone else to order this so I can get a spicy kick while maintaining my loyalty to the classic choice.

This is a place that I think you won’t need to break the bank to dine here. It’s comprehensive menu ensures that there will be something for everyone; even the picky eaters. Swing by to enjoy some oodles of hot noodles and a modern ramen brassière experience.

Thank you to Openrice and Ippudo for their kind invitation!

History of Ippudo:-

Ippudo was founded in 1985 in Japan’s ramen capital of Hakata by Shigemi Kawahara, the internationally-acclaimed Ramen King and CEO of Chikaranomoto Company, which encompasses some of Japan’s finest restaurants. Today, there are 44 Ippudo restaurants throughout Japan, serving nearly 20,000 customers per day. Ippudo SG is the second overseas venture after Ippudo NY. Other new and upcoming ventures Ippudo HK, Ippudo Seoul, Ippudo Taiwan, Ippudo Sydney, Ippudo Malaysia and Ippudo China.

The overall interior design of the outlet was cosy and comfortable. There are comics featuring on how to enjoy the ramen so that customers can have a rough idea on how would it be like. The big chandelier hanging at the centre of the outlet brings out the classic feel of the dinning restaurant. The lights are slightly dimmed lower with people chit chatting over dinner is one of the ideal dinning place if you are opting for a gathering session with nice ramen.

I ordered Choya Mandarin Orange. It comes with the choya and a bottle of mandarin orange. The choya taste wasn’t strong as it blend into the sweet taste of mandarin orange.

I had my second drink which is the Calpis drink. Calpis is an uncarbonated soft drink which taste is similar to Yakult. The drink has a light and milky and vanilla flavored yogurt taste. I had mine without soda and I am loving it. You can always try it with soda or other mixtures of drink.

We started off with appetizers and side dishes. We were served Goma Q which is the fresh japanese cucumber with sesame. The japanese cucumbers are cut into slices and well marinated. It tasted crunchy and refreshing too.

Crispy Corn is quite an innovative dish I would say. Smoked taste corn and golden shinning colours of corn makes the whole dish looks glowing. It tastes crispy and addictive after the first bite.

The presentation of the Spicy Shrimp Mayo is so beautiful that we can’t bear eating it. Lightly battered deep fried succulent prawns served with Ippudo’s homemade spicy mayonnaise dip. The tiger prawn is fresh served although it has been deep fried. We are able to taste the freshness of the prawn that blends well with the sauce.

Beef Tataki is my favourite out of the dishes. Pan-seared tender beef slices served with a tangy sauce on the side. The beef is said to be imported from Australia and I love the colours and the marbling of the beef. I had them with the slices of garlics and sauce. Thumbs up!

Pork Bun was served. This dish is a mixture of chinese cuisine style but the braised pork is cooked with Ippudo’s original sauce. Texture of the pork was tender and smooth. Perfectly blend well with steamed bun. Yummy!

Here comes the main highlight of the outlet. Ramen! Here in Ippodu the customers are given a choice to choose how would their ramen texture to be served. It can be soft, medium, hard and very hard. We had hard, medium and very hard ramen that night.

First comes the Shiromaru Motoaji is their original recipe tonkotsu soup served with thin noodles rosu chashu (pork loin), cabbage, kikurage, pickled ginger and spring onion. It is called the classic Hakata-style ramen. For this bowl, we were served with ‘hard’ noodles. The broth has been cooked for many hours. The base was light and flavourful.

The Akamaru Shiaji is their original tonkotsu broth enhanced with special blended miso paste with special blended miso paste and fragrant garlic oil. It is served with thin noodles, buta bara (pork belly), kikurage and spring onions. It’s a refined, modern-style ramen. We had ‘medium’ ramen texture this time. The broth taste was stronger compared to the original recipe as it has the miso paste in it. The taste would be slightly salty. If you prefer to have more garlic taste, you can get the fresh garlic to be pressed in the broth. It is served to individual table for customers to enhance their ramen taste.

Karaka-Men is best suit for those who loves spicy stuffs. The broth is mixture of the original tonkotsu broth with special spicy miso and ground pork. It tasted spicy for me but others are quite enjoying the taste. The ground pork was sliced to smaller sizes and mixed into the broth so you can’t really taste the pork taste. It has been covered up by the spicy broth.

Our dinner ended with a sweet thought of PR executive as she served us the Yuzu Sherbet. It was splendid dessert to end the session. Everyone enjoyed having the sherbet and the yuzu taste was strong that we were perked up immediately.

I was supposed to have dinner with a group of 9, and 6 were already present but we were not allowed to be seated till everyone arrives. While I do understand that they were making the system fair for everyone such that people don't take up seats to talk while waiting for their other friends to arrive, shouldn't they seat the group when the majority is already present? After we were finally seated, I ordered a Shiromaru Hakata Classic Ramen, a sizeable portion of noodles with a piece of char siu. Char siu was tender and flavourful. The ramen was topped with preserved ginger strips and a side of generous negi, doused in a pork bone broth boiled for four hours at least.

It was simple, classic and filling.

Here! Food picture of Akamaru Tamago Modern Tonkotsu. It is really quite an amazing bowl of ramen. When I ate at Keisuke Tori King, I thought that nothing could be better, but Ippudo definitely topped Keisuke. The flavour of the soup is not as overpowering as Keisuke's, and the ramen itself was the mainstay of the whole ramen bowl... which is a better balance.

It does not look that appealing in terms of visuals... but once I started digging in, I was so absorbed into it that I could not stop even though it was so steaming hot. Usually I might wait for it to become less hot, but it was so addictive and I could not stop!

It's difficult to nitpick at it, perhaps with the exception that it was quite a small bowl. Or maybe my appetite expanded. I was only 70% full at the end of it. I would say that if you are looking for quality ramen to impress someone with, Ippudo is the choice. It is indeed a bit expensive for me. To settle my ramen cravings, I think Keisuke Tori King ($13++) or Suzuki Ramen Bar (around $15++) would make the cut.

Visited Ippudo really awhile back, but this place is worth the reviewing! Everyone knows about the ramen restaurant tucked away in the upper floors of mandarin gallery amongst others like Lawry's and Wild Honey. I've always been dying to try the ramen here and I eventually did. You have to go to this place early though, it gets super crowded past 6.15 (I'm not joking) for walk in customers.

I ordered the Akamaru Tamago which is a tonkotsu broth with a specially blended miso paste as well as a braised egg. The egg texture is perfect and I enjoyed every bit of it. The noodles are also close to perfect, you get to choose how cooked you want your noodles to be and I chose medium. It was a bit hard when I first bit into it, but as it settled into the broth for a few minutes longer it became softer and much, much better! The braised meat is heavenly, and I mean it. The taste of the meat is perfect, it is tender and meaty and the fattiness of it is just right -no regrets here. But perhaps what I enjoyed the most is the broth. You can request for fresh garlic if you wish, but I'm not a garlic fan at all so no garlic for me. The broth by itself is a work of art and it is good down to the final drop. The bowl is substantial enough and there was no need for me to order any sides.

Service wise they are able to cope with the volume and remain courteous at all times but let's face it, no one in their right mind comes to Ippudo for the service. The ramen is truly to die for, with the rich stock broth and the tasty braised meat. Price wise, it isn't that cheap (~$18++ for my bowl above^) as compared to other popular ramen restaurants in Singapore but it is definitely one of the higher end ones when it comes to value. Maybe it's not for a every-other-week thing, but it's somewhere you'll definitely want to try at least once, and maybe go back one (or two!) more times.

The noodles are smooth and cooked to the correct consistency (you can customise doneness of the noodles).

The pork slices are not the best that I've tasted, but it is decent.
The molten egg is my weakness. On the outside, it seems overcooked. In fact, when I first bit the egg white, I thought the egg yolk was gonna be overcooked, until i bit through it.. And it was thick, creamy, not exactly runny... and very flavourful!

Nonetheless, it was a pricey bowl of ramen.

The gyoza - nothing much to rave about.

Went there on a Saturday for dinner. Just in case, there was still a queue, went there early at 6pm. Well, I guess several other people had the same idea. As it was full and there was already a queue outside. At least 10 people in front.

At last, it was our turn to enter the restaurant. Well, inside, there is another round of queuing!

As you queue inside, there are menus present so that you can decide what to eat.

The Ippudo Original Gyoza consist of 5 pieces of pan fried Gyoza. The Gyozas are quite small. On the outside, it was golden brown and crispy. Inside, it was flavourful. Small but delicious!

When ordering ramen, you will be asked how would you want your noodle. Soft, hard or medium (between soft and hard)? Your choice will determine the cooking duration.

The Shiromaru Motoaji is their original recipe tongkotsu soup served with thin noodles rosu chashu (pork loin), cabbage, kikurage, pickled ginger and spring onion. For this bowl, we requested for the soft noodles. Which means it is cooked longer till the noodle become soft. The noodles was soft, flavourful and smooth! The broth has been cooked using pork for many hours till it become this creamy colour. It was light and flavourful. Towards the end, felt that it was on the salty end.

After mixing the miso paste, the colour of the broth turns brown. It was on the salty end and with a slight taste garlic after taste. If you prefer a more intense garlic after tase, you can get fresh garlic to be pressed in the broth. I ordered the 'hard' noodles. It was springy and firm.

Adding a Tamago (egg) cost $2 more! And I was not disappointed. Inside, the yolk is not runny nor is it fully cooked. It was still semi solid. I would have expected the egg to be hard as it seems to be slightly overcooked. To my surprise, the tamago had a melt in the mouth sensation and the egg white was soft as if it was a semi-solid too.

Overall, there is still a long queue at the outlet. Ramen wise, it was better than what I have eaten at Iluma's Ramen Champion. But the star was really the tamago! Even better than Tampopo's.

ps: this place might not be suitable on a first date. (sharing of table, noisy environment)

Went to the highly raved ramen shop, Ippudo for the first time to see what the hype was about!

Ippudo Original Gyoza (SGD6)
It was a tad too oily (like you could see the plate glistening after you finished the gyozas) and your lips just got new gloss!
Vinegar dip wasn't strong enough but the gyozas were fragrant.

Akamaru Tamago (SGD17)
Original recipe enhanced with Ippudo's special blended miso paste and fragrant garlic oil. Served with thin noodles, Buta Bara (Pork Belly), kikurage and spring onion. Ippudo's original refined modern-style ramen.

It was hard to take a pretty photo of this. I did my best.

The ramen was not bad, we were given a choice of soft, medium or hard and us being us, went huh?
Then just chose medium and went suaku-ly like "Wah, I didn't know can choose the noodles' level one. I thought beef then can". :/
Love the feel of the noodles, just right!
The soup was pretty salty, and it's the kind that taste fine when you first eat but the more you eat, the less appealing the taste became.
Oh! And the Nitamago (Flavoured Egg) was runny! Love.

And and and, omg I can't believe I ate the Buta Bara.
PORK BELLY, in MY MOUTH, down the GULLET, into the STOMACH.
Okay I picked out the fats!
But the pork belly don't have those super porky taste, y'know!!! (Y)

Overall verdict: Well I guess it's okay only. The more people raved about something, the higher the expectations I have for it. Worth coming back again? For the ramen perhaps!

Walking into Ippudo, you’ll be greeted by their staff in Japanese. The restaurant has cozy decoration and warm lighting, making diners feel very comfortable. I went to dine at around 4pm, so there wasn’t really any customers there. I really enjoyed their ambience. Their staff were also patient and helpful. Food is a little on a pricey side. A bowl of charsiew ramen cost about $20, excluding the service charges. To be fair, the bowl was rather big so it’s quite worth the money. At least you’ll not go home with an empty wallet and stomach.

The noodles were super smooth and yet quite Q, so it’s really great to chew on. Soup was very thick and the just the aroma of it makes people salivate. You can’t even see the rest of the noodles under the thick soup base. One of the best ramen I have tasted I will say. The charsiew came in big pieces as well. I’ve been to Japan and tasted the ramen there. I suppose Ippudo has the closest taste to the authentic japanses ramen, in my opinion. So if you’re looking for great tasting ramen, It’s really worth it to give Ippudo ramen a try!

The dishes were not only looking great on the outside, but taste delicious as well. Not having enough of it, I descided to order a fruit pie as a dessert. It cost around $5, and I was expecting a much larger piece, but sadly it’s only less than a palm’s size ): Felt a little cheated by the pictures, but still it tasted great so I didn’t mind it that much.

Overall a very pleasant place to dine at with friendly staff and great food, just a little bit on the pricey side.

I had a bowl of Shiromaru Tamago ($18)- Ippudo’s original tonkatsu broth served with their delightfully thin, silky noodles, chasu and egg. The pork broth soup was absolutely heavenly- each spoonful is very fragrant and flavourful and I couldn’t help slurping more soup together with the thin QQ noodles. The noodles were also garnished with additional condiments like pickles and chives which I really loved. The chasu provided was tender and the whole egg served together is was of the perfect Japa

The chasu provided was tender and the whole egg served together is was of the perfect Japanese egg I’ve eaten- nice semi cooked runny egg yolk encased in the surrounding firm egg white. These small parts together make up the perfect bowl of Ippudo ramen, and I now understand the popularity of this joint!
