The estimated time given by the stall assistants during my visit was around 45 minutes but since we have traveled a long distance from our home, we decided to wait and ordered other food meanwhile.

Style of Nam Sing Fried Hokkien Mee uses yellow noodle with thin bee hoon of ratio 1:1. What I like about their style was that the stock from the prawn broth is not too cloying, the amount was in right amount, rich but not too creamy.

Sweetness consistency was well balance in every savoury bite. Besides, another part that I like most was the pieces of egg found among the noodles. Ingredients given was also generous.

Cut chilli was provided instead of those chilli paste or belachan. For those who want to add in more taste, squeeze some lime juice over them or add in the chilli.

So far, Nam Sing Fried Hokkien Mee is the best on my list.

Some say that they serve the best Hokkien Mee in Singapore, so of course I had to go down to give it a try sooner or later! We ordered the $3 portion for each of us and the portion was REALLY LITTLE - it was like a starter for me?! But serving portion aside, this Hokkien mee is truly the best that I've tasted.

Nam Sing's version is different from many others in that they use thin bee hoon instead of thick bee hoon, and is served wet, immersed in extremely flavourful prawn stock that has been reduced to something like a gravy. This means that all the noodle strands have absorbed all the lovely seafood flavours, but the noodles did not turn soggy at all. How wonderful is that!

As Nam Sing is really far from where I live, I don't think I'll go down again just to have their Hokkien mee. However if I'm in the vicinity, I will definitely return to slurp up more of their yummy noodles and prawn stock/gravy!
If you've not tried it yet, you should make a trip down soon!

I've waited for at least half an hour for my plate of Hokkien Fried Mee out of curiosity...The taste was fairly okay but definitely nothing very fantastic about it...Well, perhaps the plus point here is that the stall does not use lard so their food is probably a healthier choice but that this reason is simply not strong enough to make me queue again...There's no need for sambal, just some sliced chilies...

The Price
Reasonably priced at $3 onwards per plate

Overall
I will definitely come back again and highly recommended to try this!

This food stall is busy! They get more phone calls for pick-up orders than phone calls that are being made by telemarketers. As such, expect a little bit of a wait as there is only one guy in the back working tirelessly on a massive wok to make some good and inexpensive food. It really was worth the wait. Really good wok stir-fried noodles. The accompanying condiments of fish sauce, chilies, and lime also went well really with the noodles and seafood.

This hokkien noodles from this stall is quite generous in portion and the price is quite affordable as well. The noodles are very chewy and not too soggy in texture. The prawns used in this dish is also very crunchy and fresh as well. The prwan stock used in this local delight is also quite thick and fragrant as well. Not to forget the meat used in it are also very tender and chewy too.

Patience is definitely the key to eating the fried hokkien mee at this stall. Good thing is you just need to give your order then wait for it to be served to your table. The waiting time can be as long as 45 minutes or more if you happen to order it during their peak period. Another difference is they served their fried hokkien mee with only the red cut chillies and not the sambal chilli. Once interviewed, they mentioned it is their way to preserve the tradition passed down from their father. To taste the fried hokkien mee in the most old school way is to have it with only red cut chillies. The texture was rather moist and fragrant. I could taste the noticeable freshness of the ingredients used.

One of the most famous fried hokkien prawn mee in Singapore. You need patience if you want to eat it. The waiting time is really crazy. It can be as long as 45 minutes if you come during their peak hours. This might be the only fried hokkien prawn mee stall that refused to serve their noodle with sambal chilli but replaced it with red cut chillies with a lime. They did not use the thick bee hoon but the thin bee hoon to fry with yellow noodle in tasty stock. The texture was moist and nice. MUST

This stall doesn't need much introduction. It is another famous stall in old airport road. The thing special and something to note for chilli lovers is that they do not serve belachan chilli. Instead, they only provide the sliced red chillis. However, there is really no need for belachan, since the hokkien mee is already very flavourful on its own. The lime also helps in enchancing the taste and making it more appetising. The prawns and sotong are also fresh but the star has got to be the noodles itself, I can really eat it as it is without any ingredients because it is so good.

This doesn't taste like your ordinary hokkien mee. Dry version of the ordinary soup-soaked hokkien mee, yet hidden with gravy goodness within the nook and cranny of the noodles! The result is that you get dry noodles that are actually don't feel dry, but deliciously moist. The noodles are not soggy, prawns and sotong are fresh, lots of egg, fresh chili and lime to add zest to this dish! This is a stall famous for its hokkien mee. The stall owners firmly believe their hokkien mee is so good that it does not require any belachan chili, and hence they only provide customers with sliced red chilis. The hokkien mee is slightly to the dry side but that only means that the noodles have soaked up all the prawn stock! It is really very well cooked to perfection with the right amount of seasoning. The sliced chilis add some extra spice to the hokkien mee and I love squeezing the lime into the noodles such that it is a little sourish and saltish and spicy(red chili). I find the prawns to be very fresh and crunchy as well. Definitely not famous for nothing!

I was walking around old airport road food centre deciding what to have. I finally settled for the hokkien mee from this stall. I kind of like hokkien mee because of the gravy. This hokkien mee really meets my expectation because their noodles is really smooth and QQ. The gravy is so tasty and mouth watering. The prawns they add in is very fresh and crunchy. Their sambal chili is the highlight, brings out the flavour of the noodles.

Came here for dinner. I notice that these bee hoon are not soaked for too long and thus when fried along with the yellow noodles, it doesn’t break easily and the gives it a ‘springy’ texture. The hokkien mee was simply aromatic and delicious. The generous serving of squids and prawns also make the 30 minutes waiting time seemed insignificant. The stall also stood by it’s principle of not serving sambal chilli to their customers and only cut chilli is dished out.
